OUR HISTORY


Walker 1781 opened in the heart of Sligo in March 2020 but our history dates back to the 1781, when John Walker signed the first lease on the building — hence our name.

Nos. 11 & 12 O’Connell Street were owned by a Mrs Dunne who lived in an apartment above her shop. As she had been a widow since 1904, Mrs Dunne gifted the building to her niece, Mary Palmer, when she died in 1939. 

The building has been within the Palmer family ever since. In fact, Mary Palmer is the great grandmother of Ross Palmer, who is behind the redevelopment of Walker 1781.

The premises has gone through many different reincarnations from John Walker’s bar and Mrs Dunne’s shop in the 1900s to a pharmacy and, more recently, a well-known pub to now — a quality bar and restaurant, serving up premium pub food in Sligo.

With a menu to suit all tastes, our family restaurant in the heart of Sligo offers traditional, local produce with a contemporary twist, seven days a week.

FRESH FISH

Walker 1781 prides itself on its deep-rooted connection with the sea and its bounty, forging close relationships with local fishermen to ensure that only the freshest fish and seafood make it to your plate. This commitment to freshness and quality is the cornerstone of our culinary offerings, turning simple meals into memorable dining experiences. Among these, our steamed Lisadell mussels stand out as a signature dish. Harvested from the pristine waters surrounding Lisadell, these mussels are gently steamed to perfection and bathed in a sumptuous white wine sauce, enhancing their natural sweetness and delicate texture. Accompanied by slices of homemade brown bread, perfect for soaking up the flavorful broth, this dish encapsulates the essence of the sea.

Our menu continues to celebrate the ocean's yield with an array of options designed to cater to the diverse palates of fish and seafood lovers. The spicy tiger prawns paired with chorizo offer a harmonious blend of heat and smokiness, with the succulence of the prawns complemented by the rich, spicy undertones of the chorizo. This dish is a testament to the innovative use of ingredients to elevate the seafood dining experience.

Our "Slow Cooked Irish Beef" stands as a testament to the art of patience and precision in cooking. As its name straightforwardly indicates, this dish undergoes a meticulous eight-hour slow cooking process. This method ensures that the beef is not just tender but infused with a depth of flavor that can only be achieved over time. Accompanying this centerpiece is a serving of buttered mash, which offers a creamy, smooth texture that perfectly complements the richness of the beef. Alongside, roasted root vegetables add a sweet and earthy counterpoint to the dish's hearty base, while a beef jus lends an intense, concentrated burst of umami. The finishing touch of parsnip crisp provides a delightful crunch, adding an element of contrast to the overall dish.

All our meat is sourced from Burns Family Farm in north Sligo. For over 280 years the Burns family has been farming and custodians of the land in north Sligo.

Walker 1781 has a range of vegetarian and vegan options – including a special Vegan section on our menu – to cater for all our customers. From focaccia crostini to goat’s cheese risotto cake, butternut squash arancini and vegetable tagliatelle, we have options to suit all tastes and lifestyles at our family restaurant in the heart of Sligo.
